Street Tacos

street tacos

Spanish flavors draw me in like a big hug.  I just can't resist anything that resembles Mexican, Spanish or South American flavors.  I was blessed as a child to have someone who played a key role in my life who was from Bolivia.   Not only did she teach me the language but she introduced me to those flavors at an early age.

This is a simple & quick rendition of a classic.  You can make these with my basic Paleo wraps or just eat this meat over a big salad & serve it with this avocado lime dressing.

Street Tacos

 2 pounds ground beef

3 tablespoons taco seasoning

2 tablespoons olive oil or coconut oil

1 tablespoon lime juice

1 tablespoon liquid smoke

1/4 cup water

In a large sauté pan, heat oil over medium-high.  place beef in pan & brown, crumbling & stirring often.

when the meat is almost cooked completely, sprinkle taco seasoning over it & stir, cooking another 2 minutes.

combine water, lime juice & liquid smoke in a small bowl & pour over meat.  bring to a slow boil, then reduce heat & simmer until most of the liquid is evaporated.

serve hot in paleo wraps or on a salad
