Chimichurri Sauce


My husband discovered an extreme love for this sauce while on a hunting trip to Argentina.

I will admit, I love it as much as he does.   This chimichurri sauce is a great addition to just about any protein - try it with my Argentine Chicken.  Chimichurri is made up mostly of parsley which is a highly nutritious, healing food that doesn't get enough credit.  Most people know parsley for its popularity as a garnish, but this herb is high in vitamin K, vitamin C, folic acid & contains anti-inflammatory properties.  

This sauce can be made up quickly for a big pop of taste & stores nicely in the refrigerator for several days.    

Chimichurri Sauce


2 cups italian parsley

3/4 cup olive oil

1/4 cup red wine vinegar

6 cloves garlic

1/2 teaspoon dried crushed red pepper

1/2 teaspoon cumin

1/2 teaspoon salt


place parsley, garlic & seasonings in the bowl of a food processor.  

pulse until coarsely chopped.

pour in olive oil & red wine vinegar, then process again until parsley is finely chopped and ingredients are well combined.
