1 Minute Chocolate Cake

microwave cake

My daughter seriously has a thing for chocolate.  Honestly, I do too.  I told you about how much we love chocolate chips in this post for Banana Chocolate Chip Breakfast Bread & I can never keep myself from licking the bowl when I make the frosting for these Chocolate Chip Cookie Dough Cupcakes, but this little 1~Minute Chocolate Cake is so great because it's a fast chocolate fix!

Just mix all the ingredients together & in about 1 minute you have a dessert that is yummy but no loaded down with sugar.  It's just the right amount to satisfy, but if you wanted to make it extra special you could add this Coconut Whipped Cream to it too.  I'm just saying'....it's not a bad idea occasionally!

1 Minute Chocolate Cake

 1/4 cup light coconut milk

2 tablespoons coconut flour

2 tablespoons {unsweetened} cocoa powder

2 tablespoons maple syrup

1 teaspoon vanilla

10-12 dark chocolate chips

a pinch of salt

a smidge of coconut oil

use a smidge of coconut oil to oil the bottom & sides of a microwave safe ramekin

combine the coconut flour, cocoa powder & salt in a small mixing bowl

pour the coconut milk, maple syrup & vanilla into the flour mixture {working quickly will make it easier to whisk}

whisk all together & pour into oiled ramekin

place 10-12 chocolate chips on top of each bowl of batter

microwave 60 seconds for a gooey cake or about 70 seconds for a more firm cake.

*this makes one ramekin,
double recipe as desired for as many as needed,
simply divide batter evenly into ramekins
