Simple Italian Chicken


In Italy, cooking is actually very simple. The Italians use fresh ingredients to make romantic story book meals full of flavor.  

The ease of this dish combined with the fresh Italian essence in the basil & garlic, make it one of my favorite go to dishes to prepare.

Simple Italian Chicken


for the chicken:

4-6 boneless, skinless chicken breasts

1/4 cup olive oil

1 tablespoon dried basil

1/2 teaspoon each of salt & pepper

1/4 teaspoon allspice

for the sauce:

1 - 28 ounce can of crushed tomatoes

1 large shallot, thinly sliced

10 cloves garlic, coarsely chopped

1/2 cup fresh basil leaves, thin sliced

1 teaspoon salt

1/4 teaspoon red pepper flakes


combine spices for the chicken in a zip top bag or large dredging dish.  coat chicken on both sides with seasoning mixture.

in a large saute pan, heat the olive oil over medium high heat.    when the oil is heated, brown the chicken ~ about 3-4 minutes per side

in a medium size bowl, combine all the ingredients for the sauce.

pour the sauce over the chicken & cover with a lid.  simmer 30 minutes.  sprinkle with finishing salt if desired.

Serve with spaghetti squash.
