Gingerbread Cookies

Gingerbread houses & gingerbread people are usually what you think of when you consider the festive nature of this little cookie, however these are generally way too hard to eat & mostly for show anyway.   But these Paleo gingerbread cookies are perfect for show & eating.  They have a nice golden hue when they come out of the oven & with a slight crunch on the outside & just the right amount of chewiness on the inside.

I'm also equally as excited about the video below as I am this amazing cookie!  Once again Double Name Productions has come up with an amazing creative twist on my baking video!  So watch the video, make the cookie, let the music ring loud & clear & add to your festive cheer!

Gingerbread Cookies

ingredients

2 cups almond flour

1/4 cup tapioca flour

1/2 cup maple syrup

1/4 cup coconut oil, melted

1 tablespoon ground ginger

1 teaspoon cinnamon

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

2 {heaping} tablespoons coconut sugar

 

 

directions

preheat the oven to 350º.

in a medium size mixing bowl combine all dry ingredients except coconut sugar. 

form a well in the center of the dry ingredients & add in melted coconut oil & maple syrup.  mix thoroughly.

form into balls & roll in coconut sugar.

place on a cookie sheet lined with parchment paper & flatten with the palm of your hand.

bake 8-9 minutes.
